Hummingbird Cake
Hummingbird cake is one of my favorite cakes to make. It’s cinnamon-y, fruity, nutty, super moist, and just plain delicious. Here’s my mom’s recipe, with the recipe for cream cheese frosting to top it off. This cake’s also wonderful without icing, add a just a little cinnamon and sugar sprinkled on top, right before you bake it for a crunchy topping.
Hummingbird Cake
Ingredients:
3 cups of flour
1 1/2 cups granulated sugar
1 tsp salt
1 tsp baking powder
1tsp cinnamon
3 eggs, beaten
1 1/2 cup canola oil
1 1/2 tsp vanilla
1 (8oz) can crushed pineapple
1 cup pecans, chopped
2 bananas, chopped
How to make it:
Combine the dry ingredients in a large bowl. Add the beaten eggs, and oil. Stir until the dry ingredients are moistened. Do not beat with an electric mixer (or the cake will be tough). Stir in the vanilla, pineapple, pecans, and bananas. Pour into 2 well greased and floured 9 inch cake pans, or 1 9×13 pan. Bake at 350` for 55 minutes, before turning out onto a cooling rack. Frost with decorative cake frosting or the cream cheese frosting below.
Cream Cheese Frosting
2 (8oz) pkgs cream cheese
1 cup butter
1- 2 lb bag powdered sugar
2 tsp vanilla
Beat the softened cream cheese and butter together. Add vanilla and pwodered sugar. Blend well, and spread on cooled cake. Enjoy!

I have a bunch of ripe bananas accumulating in my freezer. Though I have a wonderful recipe for banana bread, I’ve grown very tired of plain banana bread.
This recipe sounds like just the thing!
